Do You Miss Potato Chips On Low Carb?


Missing potato chips on a low carb diet like Kimkins?

How about a healthy alternative: zucchini chips! You'll get best results if you use a mandoline type slicer. Here's how you do it:

  • Cut extra thin slices of zucchini, fan out and sprinkle with salt, pepper & garlic powder.
  • Heat 1" of canola or olive oil in a large skillet. Heat oil to 350 degrees and add the "chips" in small batches so they have plenty of room. These crisp up quickly (1-2 minutes). Watch carefully so they don't burn!
  • Remove with a slotted spoon, drain on paper toweling and serve hot!
