Does alcohol burn off when you cook?

I've heard when you cook with alcohol that it all burns off. Is that true?
No. It's actually impossible for all alcohol to burn off. According to the USDA a flambé only burns off 25%, simmering cooks off 65% and even braising for 2 hours burns off only 90% of the alcohol. Critical info for calorie counting or cooking dishes served to children.
